Bacon and Parmesan Potato Bake Recipe with 9 ingredients in 5 simple steps!
Serves 4
You will need
500ml fresh cream
handful fresh rosemary
handful fresh thyme
(Salt to season)
(olive oil, a splash)
250g diced wood smoked bacon
3-4 cloves garlic, peeled
600-800g / 7 medium UTD potatoes, sliced
100g-150g parmesan cheese, grated
60g butter, cut into cubes
2 spring onions, chopped
Method
1. Pour the cream into a small saucepan then add the fresh rosemary, fresh thyme and peeled garlic cloves. Simmer the cream with the herbs and garlic on a medium heat for 10-15 minutes until the cream takes on the flavours of the herbs and garlic. Season with salt to taste. Set aside.
2. Heat the olive oil in an oven-proof frying pan, sauté the diced bacon for about 5 minutes on a high heat until completely cooked. Remove the cooked bacon from the pan and set aside. Keep the pan, don’t wash it yet. We are going to cook the potato bake in the bacon fat.
3. Preheat your oven to 180°C.
4. To assemble the potato bake, use the pan you sautéed the bacon in (or an oven proof dish). Assemble a layer of potatoes, season with salt to taste, some bacon and grated cheese add some butter. Then repeat.
5. Pour the cream mixture over the ingredients then bake for 30-40 minutes until the potatoes are soft. This depends on how thick you slice your potatoes. To check, insert a sharp knife, if there is resistance your potatoes aren’t ready. keep cooking them until they become tender. Serve with the freshly chopped spring onion.
