Drumstick Dreams
This is a drumstick recipe of dreams. I'm a drumstick lover & I'd order a bucket of drumsticks if I could.
In this recipe, we roast our drumsticks, remove the meat from the bone, combine it with mash, cheese, chives, and fresh chilli and then skilfully put the mixture back on the bone before coating it in flour, egg, and breadcrumbs. Deep-fried in hot oil until crispy then served with gravy- this recipe is one for the holidays.

Step 1:
16 riversmead chicken drumsticks
2 tsp crushed garlic
125ml water
Season with salt and pepper to taste
Combine the chicken, garlic, water, salt & pepper on a roasting tray.
Cover with foil then roast on 180C for 60 minutes or until the meat easily comes away from the bone.
Set aside to cool down.
Discard the skin. Remove the meat from the bone. Set the bones aside. Shred the chicken.
Step 2:
6-10 small to medium potatoes, peeled, boiled with salt then mashed. Cool down
1 egg, beaten
1 cup cheddar cheese
A handful chopped chives
5-6 bird's eye chillies, finely chopped
*control the fieriness by adding more or less chilli
Combine the mash, egg, cheddar cheese, chives & chillies.
Step 3
Combine the shredded chicken from step 1 with the mash mixture from step 2
Shape a large spoonful of the chicken and mash mixture onto each bone until it resembles drumstick.
Step 4
1 cup Cake flour
6 eggs, beaten
200g bread crumbs combined with 2 tsp smoked paprika
Gently, coat each drumstick in flour first, egg next and then breadcrumbs. Set aside.
Step 5
2L sunflower oil for deep frying
Preheat oil in a deep fryer, gently place the drumsticks into the hot oil for 5-10 minutes until golden brown and crispy.
Serve with gravy.

These drumsticks will work for the entire family. Don't tell them what's inside! It's a surprise.
